Recipe from: Christmas Recipes From The Lion House
This recipe makes a double batch (6 small loaves or 2 large loaves)
4 cups flour
1 1/2 cups sugar
2 tsp baking powder
1 tsp baking soda
2 tsp salt
1/2 cup oil
2 eggs
1 1/2 cups orange juice
2 TBSP grated orange peel -zest
2 cups chopped fresh cranberries
1 cup chopped nuts
Preheat oven 350
In Kitchen Aid Mixer add: flour, sugar, baking powder, baking soda, and salt.
Mix to blend dry ingredients
Zest 2 oranges, then peel and place oranges in vitamix (or food processor).
Blend on high to make 1 1/2 cups orange juice. Add 2 eggs, 1/2 cup canola oil to orange juice and blend on low. Add about 3 cups fresh or frozen cranberries and 1 cup nuts to the orange juice and barely blend on speed 1 or 2 to chop cranberries and nuts.
Pour wet ingredients into mixing bowl, add 2 Tbsp orange zest and mix all ingredients on low until moist.
Bake 50 minutes (large loaves) 35 minutes (small loaves). cool slightly -remove loaves from pans and continue to cool completely before slicing.

Sweet and Sour Chicken
*All the kids loved this dish*
Boneless skinless chicken
flour, salt and pepper
1/2 cup vinegar
2/3 cup sugar
1 cup ketchup
2 T corn starch
grated carrots
1 can crushed pineapple
2 chopped green peppers -red work great too
Cooked rice -brown rice is a good option
Soy sauce
Drain pineapple and save juice. Roll chicken in flour, salt and pepper.
Brown chicken in soy sauce
Add veggies and pineapple
In tall glass, mix vinegar, sugar, ketchup, pineapple juice, and corn starch.
Add mixture to skillet.
Serve over rice
Red Pepper and Meatball Entree
This super easy recipe is from my trip to Holland. Mom's cousin's wife Klaske Goebel prepared it.
You will need:
Ground beef, 3-4 red peppers sliced in half vertically and cleaned out, 1 can 12 oz tomato sauce
Prepare meatballs by mixing ground beef with salt, pepper, bread crumbs etc. then cook in skillet until brown. Place pepper halves in casserole dish and fill with meatball/meatballs. Pour tomato sauce on top of all the peppers using entire can. Bake 350 for 30 minutes

Chocolate Chip Cookies
1 c sugar
1 c brown sugar
1 c softened butter
BEAT WELL
2 eggs
2 tsp vanilla
2 1/2 cups flour (unbleached is best)
1 cup whole wheat flour (or 1 more cup white flour)
2 TBSP ground flax seed -optional
1 tsp soda
1 tsp salt
Chocolate chips
Bake at 350 degrees on Silpat for 8 minutes or
Bake at 375 on pizza stone for 10-12 minutes

1 cup Orange Juice or Apple Juice (makes brown juice)
1 handful baby spinach
1/2 cup ice cubes
blend in blender until smooth
Enjoy! Yeilds about 2 cups juice

Blueberry Pie
4 cups Frozen Blueberries
1 T Lemon Juice3/4 cup Sugar
3 T Corn Starch
1/4 tsp Salt
1/2 tsp gr Cinnamon
1 T Butter
Mix sugar and corn starch in sauce pan, add blueberries and lemon juice, then salt and cinnamon. Heat til thickens, then pour into unbaked pie crust. (Use double pie crust recipe) dot with butter before covering with second pie crust. Bake on lowest rack, on cookie sheet (to catch the drips) at 400. After 30 minutes decrease temp to 350 for another 30 minutes. Cool at least 4 hours before cutting.
